This filling casserole is the classic Irish-American St. Patrick's Day dinner made in one pan--think layers of potatoes, cabbage, and corned beef. Yum!
Guinness gave this soda bread such a delicious flavor. It was much more subtle than drinking it, and my husband and I loved it. The bread is dense and hearty—perfect for dipping into the broth from the corned beef and cabbage I made with it without falling apart and so good with butter for breakfast the next day.
