Greek Salad
This Greek salad is a regular on my menu. I love the salad ingredients, but the dressing is what keeps me coming back to this recipe.

Ingredients
1
head
romaine lettuce
cut into 1/2" pieces *
6
ounces
pitted black olives
drained
1
pint
grape tomatoes
(about 12 ounces), halved
1
small or 1/2 large red onion
thinly sliced
½
English cucumber
thinly sliced **

ounces
feta cheese
crumbled
salt and pepper
to taste
Salad Dressing
½
cup
extra virgin olive oil
¼
cup
fresh lemon juice
(1 large or 2 small lemons)
1
clove
garlic
pressed or minced
1
teaspoon
dried oregano
¼
teaspoon
salt
or to taste
Instructions
Toss the salad ingredients together and top with crumbled feta cheese.
Mix the salad dressing ingredients together in a sealed container and shake to blend.
Pour the dressing over the salad, top with salt and pepper, and enjoy!
Notes
* You can use 1 large or 2 small heads of romaine
** You may substitute a regular cucumber, peeled and seeded, if desired
