As I perused the net for ideas for seasonings (rubs and finishing sauces), I discovered "brining", (marinating with a salt solution). I really didn't want to put too much extra salt into my food, so I used half of what was called for and tried it. I used 2 cups of apple cider, 1 TB of salt and a 1/4 cup of liquid smoke (optional). I put the chicken in a large plastic tub and marinated it in the refrigerator for 1 hour per pound as stated. Then I roasted my chicken on the steamer with more cider and onion and garlic powder. MAGIC! That chicken was the best I ever ate. I know everyone is saying the same thing, but it's totally true. I can't wait to try the turkey steamer. I will brine it, and steam with cider. Never in my entire life have I had a turkey come out beyond "pretty good". I have a feeling my luck will be changing now that I found the Sittin' chicken and Sittin' turkey.
UPDATE: I just called the manufacturer/inventor to ask if this ceramic steamer could be used in the oven at a higher temperature. I was pretty sure it could since they use it on a hot grill. The low temperature took too long, and just wasn't convenient for me. Although it was very juicy and tasty, the low temperature did not produce a crispy skin (and lets face it, that's the best part of the chicken!). The man said it was perfectly OK to roast at higher temperatures as I thought. I will go back to roasting at 350-375 degrees.
Clean up is super simple, you just dump everything that was inside the chicken into the garbage and I rinsed it off and popped it in the dishwasher and it came clean perfectly.
You can have fun coming up with different ingredients to add to it also. One of my favorites is an Asian mix similar to Korean bulgogi. The throne comes with several ideas though, and anything you could use as a marinade can be used in the throne to steam into the chicken also.
Given it's price point, I think this is something every BBQ and grilling fan should have in their cooking toolbox.
